At the same time, casual chef-driven restaurants and neighborhood dining concepts are growing. Thailand’s 2026 Michelin Bib Gourmand selection features 137 venues across 16 cuisine types, including 13 newcomers—showing that quality food does not always need a luxury price tag.

These two movements may appear different, but they share one idea: customers want a story.

Whether it is a futuristic tasting menu or a small family restaurant protecting a local recipe, people want to understand where their food comes from and why the experience matters.

The smartest operators will combine authentic flavor, fair value, strong visual identity, and memorable hospitality. Technology can enhance the experience, but it cannot replace soul.
